Coco-Mint Chocolate Chip Ice Cream at MF&L

I cleaned out the vegetable drawer last weekend with some turnip, kale, and lentil soup, a sweet broccoli and cabbage salad, and this ice cream, made with a large bunch of fresh mint.

It's incredibly rich, and easy to make if you've got some of this herb laying around. I posted the recipe on the Maine Food & Lifestyle blog.

  2. That looks delicious! I am on an ice-cream making kick lately.

    The banana-peanut butter ice cream on my blog is an adaption of the cashew-banana ice cream in "Eat, Drink, & Be Vegan." I replaced the cashew butter with peanut butter and only used half the amount so the banana flavor really comes though. And I added some chocolate chips at the end for good measure.

  3. Oh man, I have a whole mint plant in my herb garden. I really need to find my mom's ice cream maker...I borrowed it, thought I gave it back, and now she claims that I still have it, but I can't find it. Bah!! I want ice cream!

  4. You should try the new cookbook by Wheeler del Torro, "The Vegan Scoop". The recipes are so easy, and the ingredients aren't too hard to find. He own's Wheeler's, the vegan ice cream shop in Boston. Gotta go there some day...

  7. Anon: Unfortunately, I think Wheeler's opened right around the time I moved away from Boston. I may check out some of the recipes, but I'm pretty picky about my ice cream-- I find that vegan ice cream usually tastes too much like soy. Which recipes do you recommend?

    Oraphan: For many people an ice cream maker isn't worth the investment, but I love ice cream and I'm very particular, so I usually prefer to make my own. I try not to post a lot of recipes that call for unlikely appliances, but I do make an awful lot of ice cream.

  9. That photo made me stop dead in my tracks and drool. Mint chocolate chip is one of my all-time favorite ice cream flavors! Oh, does that ever look good.
