But I know what you mean, and there is something to be said about a nice soft tortilla. No funny bean taste. I&#39;ve made them twice. The first time they were delicious, but pretty dry and crumbly. The second time I added 1/4 teaspoon xantham gum to the batter at the end, and the cupcakes were much more cohesive, but also dense. So it&#39;s a toss-up on adding or not adding the xantham. But they taste good!
